Salmon and Soba Noodles

Sometimes you just want something that feels light and fresh to eat with not too much preparation fuss! 

100g Soba noodles
400g fresh salmon
1 tablespoon of olive oil
Salt and pepper
2 spring onions, sliced
Small handful of fresh coriander, chopped
1 lime
Ground black pepper
2 tablespoons of capers
10 cherry tomatoes, halved (optional)

Dressing:
80mls of Tamari or Kikkoman Soy Sauce
Juice and zest of 1 lime
5mls of fish sauce
1 tablespoon of palm sugar, coconut sugar or honey

Heat the olive oil in a frypan over a medium heat, season the salmon and add to the frypan, cook on both sides until golden brown. Set aside.

Cook the soba noodles until soft, strain.

While the noodles are cooking add all the dressing ingredients to a small saucepan and heat over a moderate temperature until the palm sugar is dissolved. Cool.

Place the noodles into a serving bowl or dish, flake the salmon over them. Add the dressing, capers and tomatoes, stir to combine then top with the sliced spring onion and chopped coriander.  Season with pepper. Serve with lime wedges.
